Quinoa Tofu Stir Fry

1 cup cooked quinoa

1 tablespoon coconut oil

1 celery stalk, diced

2 large carrots, diced

3 tablespoons low sodium (gluten free) soy sauce

¼ cup chopped cilantro

1 cup cubed plain tofu (Trader Joes’ firm tofu)


Prepare the quinoa according to the instructions on the package. Heat coconut oil on medium-low in a large shallow pan. Turn the heat to medium-high, add the vegetables and stir-fry for 5 minutes, stirring occasionally. Add the tofu and stir until hot. [Optional: add additional spices, including ground ginger, cayenne or agave for extra flavor.] Stir in the cooked quinoa and soy sauce, then cover and let steam for 5-10 mins on medium-low heat, until veggies are tender. Stir in the chopped cilantro and serve. Makes 2 servings.


Slender Silky Chocolate Pudding

Slender Silky chocolate Pudding

16 ounces silken tofu (Nasoya Organic Silken Tofu)

1/3 cup unsweetened cocoa powder

6 Truvia packets (or ¼ cup)

3 tablespoons agave nectar

1 teaspoon vanilla

1 tbsp cashew milk

¼ tsp sea salt


Add the ingredients to food processor or blender and pulse until creamy. Chill in the refrigerator for at least 1-2 hours. Serves 2.
