Zucchini Noodles:

Use a spiralizer to cut zucchini into spiral noodles. Heat a skillet to medium-high heat and coat the bottom with nonstick cooking spray (or 1/2 tablespoon oil). Add the noodles, salt and pepper and cook 5-7 minutes, stirring frequently. Sauté until tender.

No spiralizer? Use a vegetable peeler to make zucchini ribbons instead. You can use this process for Carrot Noodles as well.
