We created a recipe for Skinny QUESO (recipe below)! Yes, there is actually cheese in this -- but instead of the queso you buy in a jar with all those unidentifiable ingredients and preservatives, we have a 7-ingredient recipe that will have you dipping your (healthy) chips all game long.


We also slimmed down Nachos (recipe below) for you to enjoy during Super Bowl XLIX. PopChips, lean ground turkey, fresh tomatoes and onions help to cut down the calories and fat in this game-day favorite dish.

Skinny Queso

Skinny Queso

2 cups cauliflower, cut into florets

2 cups broth (organic, low sodium)

2 tablespoons Greek yogurt

1 cup (reduced fat) cheddar cheese

1 tablespoon olive oil

1 poblano pepper, chopped

1 tomato, chopped


Preheat the oven to 450 degrees. Toss the diced poblano pepper and tomato in olive oil and salt and roast for 15 minutes. In a medium saucepan, bring the cauliflower florets and broth to a boil, then cook for 6-8 minutes until soft. Drain the cauliflower in a colander. Add the cauliflower, Greek yogurt and cheese to to a Vitamix, blender or food processor and pulse until creamy. Add in the roasted peppers and tomatoes and pulse to combine. Transfer the queso to a bowl and serve with organic chips. Serves 15. [Per 2 tablespoons: 70 calories, 4g fat, 6g carbs, 1g sugar, 11g protein].




2 servings PopChips (potato or tortilla)

1 pound lean ground turkey (substitute 1 avocado, chopped)

2 tablespoons chili powder

2 cups black beans, rinsed and drained

1 cup tomatoes, finely diced

½ cup onions, finely diced

½ cup cheddar cheese


Preheat the oven to 350 degrees. In a medium nonstick skillet, add the ground turkey and chili powder, crumbling the meat with a spatula. Brown the meat for 5-7 minutes. While the meat is cooking, arrange the chips on a cooking sheet lightly coated with nonstick cooking spray. Top with the meat, then layer the tomatoes, black beans and onions. Sprinkle evenly with the cheese. Bake in the oven for 10-12 minutes until the cheese is bubbly and melted. Serve hot. Makes 6 servings [Per serving: 260 calories, 11g fat, 16g carbs, 2g sugar, 25g protein].
